Xidato is a soup with goat meat and offal (sometimes called tripe). It is usually served at celebrations following religious services or sometimes even for casual nights. Also, it is served at the “antigamo” or day after the wedding feast when relatives and friends gather and eat this soup as a remedy for stomach upset…. a result of the festivities of the previous day
Ingredients:
Tripe and intestine of Goat
9 cloves garlic
1 cup vinegar
Salt and pepper
Directions:
Wash and clean the tripe and intestines well, and in boil in generously salted water. Remove the meat from the broth but retain the cooking liquid. When the meat is cooked and cooled a bit, mince and return the pieces to the cooking broth.Mash the garlic well with a mortar and pestle and mix with vinegar. Add the garlic mixture to the pot and return to a boil. Serve in deep dishes.
